Ingredients
  

  • 2 tsp baking powder
  • 3/4 cup all-purpose flour
  • 1 –2 tsp salt to taste
  • 1 Tbsp cornmeal
  • 3/4 cup milk
  • 1 Tbsp granulated sugar
  • 1 1/2 medium onions chopped (approximately 2 1/2 cups)

Instructions
 

  • Combine the all-purpose flour, cornmeal, granulated sugar, baking powder, and salt in a mixing bowl, ensuring the ingredients are well blended.
  • Gradually pour the milk into the dry mixture and stir until a thick batter forms.
  • Incorporate the chopped onions thoroughly into the batter, ensuring even distribution.
  • In a heavy skillet, heat about 1/2 inch of oil over medium-high heat until it reaches a temperature between 350°F and 375°F.
  • Using a tablespoon, carefully drop portions of the batter into the hot oil, gently flattening each mound slightly with the back of the spoon.
  • Fry each fritter until golden brown and crisp on both sides, turning once as needed.
  • Remove the fritters from the oil and allow them to drain on paper towels. Serve promptly while warm.

Notes

These fritters are delightful when served with ranch dressing or your favorite dipping sauce. Adjust the salt to taste based on preference.
