Bisquick Sausage Muffins

Hearty, savory, and packed with flavor, Bisquick sausage muffins are the ideal choice for breakfast, a quick snack, or a delightful side to a warm bowl of soup. They can also be crafted into smaller sizes for charming appetizers.

Ingredients
  

  • 1/4 cup green onions sliced
  • 16 ounces breakfast sausage
  • 1 cup Bisquick™ Original Pancake & Baking Mix
  • 4 large eggs lightly beaten
  • 1 cup sharp cheddar cheese shredded

Instructions
 

  • Preheat the oven to 350°F (177°C) and either line a 12-cup muffin pan with cupcake liners or generously grease the muffin cups; set aside. In a large 12-inch skillet set over medium-high heat, cook the sausage, breaking it apart with a spoon, until fully browned and no pink remains. Transfer the cooked sausage to a paper towel-lined plate and allow it to cool for approximately 10 minutes. In a medium-sized mixing bowl, combine the lightly beaten eggs, shredded sharp cheddar cheese, sliced green onions, the cooled sausage, and the Bisquick baking mix, stirring until the mixture is evenly incorporated. Spoon the batter into the prepared muffin cups, filling each about three-quarters full. Bake in the preheated oven for around 20 minutes, or until the muffins turn golden brown on top and a toothpick inserted into the center comes out clean.

Notes

For bite-sized appetizers, use a mini muffin tin and adjust the baking time accordingly, reducing it by a few minutes.
