Kielbasa Sausage Cheesy Potato Casserole

Ingredients
  

  • 1 tsp freshly ground black pepper
  • 3 large russet potatoes peeled and diced into ½-inch cubes
  • 1 cup diced yellow onions
  • 1 cup sharp cheddar cheese plus extra for topping if desired
  • ½ cup water with additional as needed in ⅛-cup increments
  • 2 cloves garlic minced finely
  • 10.5 oz can cheddar cheese soup use half
  • 1 tsp Slap Ya Mama® seasoning
  • 1 lb kielbasa sausage sliced ¼-inch thick and each piece quartered
  • 1 cup chicken broth
  • 1 cup heavy cream

Instructions
 

  • Preheat the oven to 350°F and coat a 13 x 9-inch or 3-quart baking dish with non-stick spray. Set it aside.
  • In a large Dutch oven or stock pot, combine the sliced sausage with ½ cup of water over medium heat. Allow the water to evaporate as the sausage browns; supplement with additional water, ⅛ cup at a time, if necessary.
  • Add the diced onions and continue to cook for 3–4 minutes, then stir in the garlic and cook until the onions become translucent.
  • Incorporate the diced potatoes into the pot. Pour in the chicken broth, heavy cream, half the can of cheddar cheese soup, seasoning, and pepper. Mix thoroughly.
  • Allow the mixture to heat over low until it reaches a low boil, then turn off the heat and stir in the sharp cheddar cheese.
  • Transfer the mixture into the prepared baking dish, spreading evenly. Optionally, sprinkle additional cheese on top.
  • Cover the dish with foil and bake for 65 to 75 minutes, or until the potatoes are tender.
  • Remove the foil and return the dish to the oven for an additional 10 minutes to brown slightly.
  • Carefully take it out of the oven and serve hot.

Notes

Substitutions: You may substitute other types of sausage or cheese to suit your taste.
Make-Ahead: Can be assembled a day ahead and refrigerated until ready to bake.
Storage: Keep leftovers in an airtight container in the fridge for up to 3 days; reheat as needed.
